I thought Iterm would remember my whole session, like Apple Terminal does,
but I guess not. I used the "history" command and that caused the start of
my session to disappear. How do I get my whole session to be remembered?

Are you asking about how far you can scroll back or how much history your
shell remembers?

The scroll back history size is configured in Prefs>Profiles>Terminal. The
number of lines saved and restored across launches of the app is currently
hard-coded to 10,000 but I should make that configurable.
